We all love tacos. They are amazing on their own. But some people have gone out of their ways to experiment with tacos. For those who want to make unique tacos on Taco Tuesdays, we’ve collected a few recipes.

Spaghetti Tacos
Making Fresh Tomato Sauce
- Sauté chopped minced small onion until translucent
- Add one teaspoon of red pepper flakes, one teaspoon of dried oregano, four cloves of chopped garlic, and 4 tablespoons of tomato paste
- Then sauté for a minute
- Put everything in the food processor and add a can of San Marzano tomatoes
- Mix them again in a pan nice and slow
- Add chopped fresh basil
- Partially cover and bring the pan to simmer
- Then lower the heat to ‘low’ and stir every 10 minutes for an hour
- Once the sauce is done (after an hour), add al dente pasta into the sauce with kosher salt, 2 tablespoons of butter and a good drizzle of olive oil
- Toss if possible
Making Meatballs
- Mix a pound of ground beef, an egg, panko breadcrumbs, little garlic powder, a little splash of milk, and a shake of oregano
- Use your hand to make 1-inch-balls and bread them
- Deep-fry the meatballs using a quart of vegetable oil
When both the meatballs and pasta are done, you put them in a taco shell. You can also shave some Parmesan cheese on top!
Brussels Sprouts and Bacon Tacos
- Heat 4 tablespoons of olive oil in a large skillet
- Add sliced 2 medium white onions, 5 large halved garlic cloves, and 4 thinly sliced jalapeno peppers
- Fry and stir often for about 5 minutes
- Stir in 1/4 cup of chicken broth, 1/4 cup of cider vinegar, 1/2 teaspoon of dried thyme, a 2-inch piece of cinnamon stick, 1/2 teaspoon freshly ground black pepper, 3 bay leaves, and 3 whole cloves
- Let them simmer for 30 minutes. Stir occasionally.
- Remove from heat, season with salt and put them in a bowl on the side
- Cook 1 tablespoon of olive oil and 1/2 pound of halved brussels sprouts in the same large skillet for about 6 minutes
- Combine the browned brussels sprouts into the mixture in the bowl
- Cook 1/4 cup of chopped bacon
- Scoop them into warm tortillas
- Top cooked bacon and cheese
Vegan Jackfruit Tacos
- Get green jackfruit in brine or water (not in syrup) – you can find it on Amazon or Asian grocery stores
- Cut the fruit into thin slices
- Slice half of a white onion and chop 2-3 cloves of garlic
- Heat the onion and garlic in a skillet for about 5 minutes using 1 tablespoon of vegetable or canola oil
- Add jackfruit slices, 1/4 cup of vegetable broth, half of a juiced lime, 1 tablespoon of agave, 1 tablespoon of chili powder, 1 tablespoon of cumin, 1 teaspoon of smoked paprika, and a pinch of salt
- Stir and everything
- Let it simmer, covered, for 5 minutes until half of the broth is absorbed and jackfruit slices are tender
- Grab a potato masher to mash up the jackfruits
- Add the mix into a taco shell
Frankenstein Tacos
This taco is made with the ingredients for french toast, omelet, butternut squash, parfait, and green smoothie. So if you are a breakfast food lover, this recipe is for you.
- Make toasts to use as taco shells
- Make scrambled eggs
- Sauté chopped butternut squash, some kale, toasted almonds and , and chopped red onions
- Put them all in the french toast shells
- Combine celery greens, parsley, lemon juice, and greek yogurt into a blender to make a green smoothie sauce for the tacos
- Pour the sauce on the tacos
