Weird, Unique Recipes for Taco Tuesdays

Vegan Jackfruit Tacos

  1. Get green jackfruit in brine or water (not in syrup) – you can find it on Amazon or Asian grocery stores
  2. Cut the fruit into thin slices
  3. Slice half of a white onion and chop 2-3 cloves of garlic
  4. Heat the onion and garlic in a skillet for about 5 minutes using 1 tablespoon of vegetable or canola oil
  5. Add jackfruit slices, 1/4 cup of vegetable broth, half of a juiced lime, 1 tablespoon of agave, 1 tablespoon of chili powder, 1 tablespoon of cumin, 1 teaspoon of smoked paprika, and a pinch of salt
  6. Stir and everything
  7. Let it simmer, covered, for 5 minutes until half of the broth is absorbed and jackfruit slices are tender
  8. Grab a potato masher to mash up the jackfruits
  9. Add the mix into a taco shell
